People in Hong Kong and Taiwan use traditional Chinese charachers but people in the Mainland China uses simpified Chinese charachers.
Which one do you perfer learn to write? I perfer writing the traditional ones even they may be harder to learn because they are the original ones. Ancient China used the traditional ones too. The traditional Chinese charachers appeared in China Town more often than the simpified ones. Also, I think simpified Chinese charachers are for lazy people. :p

Traditional. When I went to China with my gf, who's from HK, I had a hard time reading the characters on buildings, signs, and things. Japanese language utilizes the traditional characters so I can recognize (not read) most of the characters my gf writes, but the simplified ones are beyond me.
